ALASKAN BBQ & ROASTED BROCCOLI

It has been a few days since our Labor Day festivities, but I still wanted to share the details of our Alaskan inspired BBQ and my contribution to the dinner, my favorite roasted broccoli recipe.  On the Sunday before Labor Day my parents invited Jeff and me over for a family BBQ, to celebrate the unofficial end to summer.  My mom has recently been exploring her culinary skills with themed dinners all summer long.  So far she has hosted an All-American-BBQ, a Hawaiian Luau, and lastly an Alaskan BBQ.  



Our evening would not have been complete without a little excitement, as an unexpected summer rain shower poured down minutes before we were to sit down for dinner causing us to move our meal indoors, and drenching the lovely table setting.  I was lucky to get one photo of the cute napkin holders before the downpour.  Aren’t the hugging bears adorable?

Well, the sudden downpour didn’t ruin our delicious meal one bit, in fact, it added a little Alaskan ambiance to the meal.  While my parents prepared most of the meal, including cedar plank smoked Tilapia, cranberry mashed potatoes, and homemade apple cobbler, I made the roasted broccoli, and I’m sharing the recipe below with all of you.  It is very easy to make and perfect for weeknight meals. 

Serves 4
Ingredients:
12 ounce Bag of Fresh Broccoli Florets
3 tablespoons Olive Oil
1/2 teaspoon Mrs. Dash Original Blend Seasoning
3/4 teaspoon Himalayan Pink Sea Salt
1/2 teaspoon Ground Black Pepper

Directions:
1.  Preheat the oven to 375 degrees.
2.  Line a rimmed baking sheet with tin foil.
3.  Place broccoli florets onto a baking sheet.  Trim larger florets into smaller bite-sized pieces. 
4.  Drizzle olive oil over the top of florets, followed by Mrs. Dash Seasoning, Salt, and Pepper. 
5.  Toss broccoli florets till evenly coated.
6.  Bake in oven for approximately 25-30 minutes, until the edges are slightly crispy and charred. 
7.  Serve immediately.

And, of course, the pups were all part of the festivities.  Becks and Beowulf spent the afternoon at the groomers getting their “summer cuts.”  Don’t they look handsome?
