Today is a very special day in our household; it is Becks’ 9th birthday! He is such a lovable pup, who has brought so much joy to our little family. As a rescue dog, he didn’t have the greatest start to his life, so whenever May 30th comes around, I make sure to let him know just how special he is to our family. This year I made pup friendly Black and White Cookie treats for my little buddies birthday celebration.
Makes 6 Cookie Treats
Ingredients:
¾ cup Whole Grain Rice Flour
1 Egg
2 ½ tablespoons Vegetable Oil
2 ounces of Natural Carob Chips
2 ounces Plain Yogurt Chips
Directions for Cookies:
1. Preheat oven to 350 degrees.
2. Line a baking sheet with parchment paper.
3. In a small bowl, whisk egg and vegetable oil together.
4. Add whole grain rice flour to the off and vegetable oil mixture. Whisk till mixture forms dough.
5. Roll dough into a small ball and place on cookie sheet.
6. With excess whole grain rice flour cover the bottom of a clean glass with flour and place onto dough ball flattening it to form a circle. Repeat process until dough is finished.
7. Bake cookie treats for 20-25 minutes or until cookies are golden brown.
8. Place cookies on a baking rack to cool.
Directions for Icing:
1. Melt the yogurt chips in a small heat safe bowl over boiling water.
2. Using a spatula spread melted yogurt chips mixture over the top of cooled cookies. Allow the yogurt chip spread to set.
3. Melt the carob drops in a small heat safe bowl over boiling water.
4. Using a spatula spread melted carob chip mixture over half of each cookie.
5. Allow cookies to set before serving.
