I love an easy grab-and go breakfast, and this recipe has the added benefit of also being healthy. I first was introduced to muesli when I was a little girl on a family trip to Europe. I didn’t care for the European style milk, so I added my Muesli to yogurt instead, and it instantly became a favorite of mine. Fast forward to today, and this is still my go-to breakfast nearly every weekday morning.
This recipe is super simple to make and lasts for the week. I usually make a double batch on Sunday nights, and divide it up into mason jars for the week. When I was still commuting to work, I would eat my parfait on the train. Now, mornings look a bit different, and I’m enjoying my parfait at my desk while I scroll through my morning emails.
Serves 4
Ingredients:
2 Tablespoons Honey
½ Teaspoon Ground Cinnamon
2 Cups Plain Greek Yogurt
1 Package of Muesli (I like to buy Sprouts store brand)
Directions:
1. Measure out honey, cinnamon, and yogurt.
2. Mix and stir together the yogurt, honey, and cinnamon in a medium bowl.
3. Once honey, cinnamon, and yogurt are well mixed, measure yogurt mixture evenly into containers. I like to use Mason Jars and these leak proof tops.
4. Add 1/3 a cup of muesli to each yogurt container. Seal up containers, and store in the refrigerator until you are ready to enjoy.
Honestly, these parfaits just get better and better as the week goes by and the muesli has had time to soak in the Greek yogurt (similar to overnight oats).
