BECKS’ BIRTHDAY BISCUITS
This post is in memory of my dear little pup Becks who passed away unexpectedly last July. May 30th would have been his twelfth birthday, and I loved to make him a special treat on his birthdays. Last year I made these Birthday Biscuits for his celebration, and he loved them. In fact, he gobbled them up so quickly, I almost didn’t get a picture for my blog post.
I’ll be making these treats again tomorrow for my other pups in remembrance of Becks. We are a family that loves to celebrate, and what better time to celebrate the wonderful life of a really amazing dog but with his favorite thing in the whole wide world–TREATS!
I hope you enjoy making these biscuits for your dogs. They are very easy to make, and more importantly, perfect for holidays because you can coordinate themed cookie cutters to match the holiday. Why not make a batch for your friends with dogs, because even dogs need treats during quarantine? Be prepared for “taste testers” to sit at your feet for the whole process!
Ingredients:
(For the Biscuits)
1 and ½ Cups of Flour
1 Cup of Peanut Butter
1 Whole Banana
3 Eggs
½ Cup of Coconut Oil
(For the Icing)
½ Cup of Tapioca Starch
½ Cup of Plain Yogurt
2-3 Teaspoons of Milk
Food Coloring (Optional)
Directions for Biscuit:
- Preheat oven at 350 degrees.
- Using a stand mixer, combine all biscuit ingredients together in stand mixer bowl and mix at medium speed until the dough is well combined. If the dough is too dry, you can add an extra egg. If the dough is too wet, add more flour. I used an extra cup of flour beyond the 1 and ½ cups called for in the ingredients.
- Once the dough is mixed, refrigerate for 15 minutes. The cool dough will be easier to roll with a rolling pin.
- While the dough is in the chilling, find cookie cutters to use. I used a dog bone cookie cutter.
- Once the dough is chilled, roll flat with a rolling pin. You can spread flour on your rolling pin so your dough does not stick to the rolling pin. Arrange cookie cutters on flattened dough.
- Lay cutout biscuits onto a non-stick cookie sheet. If you use a non-stick cookie sheet you do not need to grease the pan.
- Repeat step five, until you have made the desired amount of biscuits.
- Bake at 350 degrees for 20 to 25 minutes or until biscuits are golden brown.
- When biscuits are done, remove cookie sheet from oven and cool to touch before transferring biscuits to cookie racks to continue cooling.
- Make icing.
Directions for Icing:
- In a mixing bowl combine yogurt and tapioca starch.
- Mix until you have a creamy texture, then add milk slowly and mix until thoroughly combined.
- If the mixture gets hard, just stir it to get to the consistency of icing.
- Add food coloring to the icing mixture. You can separate the icing into various bowls, so you have the option to make more colors.
- Decorate cooled biscuits and refrigerate to harden. The longer you refrigerate the biscuits the better.
Becks loved his birthday biscuits. He gobbled them all up within seconds when I was taking pictures for this post. Sadly, he passed away a few weeks later and I didn’t have the heart to post this. Now on the anniversary of his 12th birthday, I thought this was a perfect way to remember him. I hope you enjoy making these for your pup on their special day, or better yet, just because you love them. And, I will be making these on May 30th in honor of Becks for The Pack to enjoy and in remembrance of Becks on his birthday.

I miss that little fellow so much. It still breaks my heart to know he isn’t on this earth anymore, but his paw prints will be on my heart forever. Love you so much Becks.

We all miss him, but I’m so glad he sent us Becksie to liven things up.
