BEOWULF’S 13TH BIRTHDAY & BLUEBERRY & BANANA BUNDT CAKE

April 14, 2021

On Sunday, my sweet boy, Beowulf, turned 13 years old.  We celebrated earlier in the week with a seaside-themed birthday party, and Beowulf had his very own blueberry and banana bundt cake.

Beowulf has always been my most special pup, since he is the first dog I’ve owned.  For as long as I can remember, I have wanted a dog, a Scottie dog to be exact.  When I saw Beowulf for the first time in June of 2008, it was love at first sight; and he has been my best furry friend ever since.  Shortly after I adopted Beowulf, I moved north to Downtown Seattle, and his favorite thing to do there was walk along the Elliot Bay Trail waterfront and swim in Pocket Beach.  Thus, a seaside-themed party seemed the perfect way to celebrate Beowulf’s big day.

Beowulf’s special treat was his very own, pup-approved, homemade blueberry and banana bundt cake.  I think you can tell from the picture how much he enjoyed it; his eyes tell the story.  I tried to take more pictures, but he finished the cake in almost two bites.  He wasn’t really interested with the photo shoot I had planned.  I am happy that he loved his birthday treat though, and so did Schenna, Bunker, and Becksie.  I made sure I made extras, so everyone had a treat.

Luckily, Beowulf was willing to let my parents and me each take a special picture with the birthday boy.  Both of my parents have a super soft spot for Beowulf because he is their first grandpup.

Dinner was a family affair.  My mom set a beautiful, themed table, complete with her crab-decorated plates.  She also made, from scratch, crab cakes, and air fryer French fries.  I made my famous baked broccoli along with a blueberry bundt cake for us humans.  My Dad even made his delicious homemade guacamole.

We concluded the evening by singing Happy Birthday to Beowulf; but at that point he had had enough of all the fuss.  I guess at 13 you can get away with being a little grumpy.  Everything was wonderful, and I’m sure Beowulf felt very special.

Here is the recipe for the (pup-approved) blueberry and banana bundt cake topped with honey and yogurt glaze.  Hopefully when you make it for your pups, they won’t gobble it down in two bites like Beowulf did.  Regardless, it is so easy to make and it is sure to be loved with every bite!

Makes 2 Mini Bundt Cakes

Ingredients:

(For the Bundt Cakes)
½ Cups All-Purpose Flour
1 Teaspoon Baking Powder
1 Mashed Banana
1 Egg
1/3 Cup Plain Yogurt (I used lowfat)
¼ Cup Blueberries
3 Tablespoons Olive Oil

(For the Glaze)
1 Tablespoon Honey
¼ Cup Plain Yogurt (I used lowfat)

Directions for Bundt Cakes:

  1. Preheat oven to 350 degrees.
  2. Spray your mini bundt pan with nonstick spray and set aside.
  3. First, mix together the flour and baking powder in a small bowl, and set aside.
  4. Second, mix the mashed banana, egg, plain yogurt, and olive oil.  Stir until the mixture is creamy.  Once combined, add in the flour mixture.
  5. Before folding in your berries, toss them in flour to ensure they do not fall to the bottom of your pan. Once coated, fold them into the batter and transfer the batter into your bundt pan.  The batter should fill two mini bundt cake holes.
  6. Bake the bundt cakes for 20 to 22 minutes, testing with a toothpick to ensure they are cooked all the way through. Remove from oven and let cool for 10 minutes before flipping the cakes out of the pan.
  7. Continue to cook the bundt cakes on a wire rack.

Directions for Glaze:

  1. Combine the yogurt and honey while the bundt cakes bake.
  2. Once the bundt cakes are completely cooled, drizzle the glaze over your bundt cakes and let your pup enjoy!
