SPICY KISSES COOKIES

February 11, 2021

A delightfully reimagined take on McCormick spices’ gingerbread cookies recipe, these spicy kisses cookies are the perfect homemade treat for the winter months or, better yet, as an edible treat for a loved one on Valentines Day.

A recreation of the classic thumbprint cookie, these gingerbread and spice cookies topped with a milk chocolate kiss melt in your mouth.  I’m sure you’ll find it hard to resist eating just one of these sweet and spicy cookies.

Makes 60 Cookies

Ingredients:

3 Cups Flour
2 Rounded Teaspoons Ground Ginger
1 ½ Rounded Teaspoons Ground Cinnamon
1 Teaspoon Baking Soda
¼ Rounded Teaspoon Nutmeg
¼ Teaspoon Salt
¾ Cup (1 ½ sticks) Softened Butter
¾ Firmly Packed Brown Sugar
½ Cup Molasses
1 Egg
1 Teaspoon Vanilla Extract
½ Cup Granulated Sugar
60 Milk Chocolate Heresy Kisses

Directions:

1. Whisk together flour, ginger, cinnamon, baking soda, nutmeg, and salt in a large bowl until ingredients are mixed.  Set mixture aside.

2. With a stand mixer (or eclectic mixer) beat together butter and brown sugar on medium speed until light and fluffy.
3. Add molasses, egg, and vanilla to the butter and brown sugar, and mix well.
4. Gradually add in flour mixture on low speed until well mixed.

5. Press dough into a 1-inch-thick flat rectangle. Wrap in plastic wrap.
6. Refrigerate dough for a minimum of four hours.

7. Preheat oven to 350 Degrees Farenhight.
8. Cut chilled dough into 1-inch squares.
9. Roll each piece of dough in your hands to form a ball.
10. Roll balls in granulated sugar to coat.
11. Place dough 2 inches apart on an ungreased baking sheet.

12. Bake for 8 to 10 minutes, or until the edges of cookies have begun to brown.
13. Once you remove cookies from the oven, immediately press the milk chocolate kiss into the center of each cookie.

14. Carefully remove cookies from the baking sheet and place them on a wire rack to cool completely.
15. Once cooled store cookies in an airtight container.

These cookies will stay fresh and chewy for up to five days if stored in an airtight container. What is your favorite cookie to bake? I’d love to know in the comments below.
