This past weekend I started off my summer break with a family BBQ on Sunday. My parents hosted the evening with a wonderful array of savory foods, and I brought the pasta salad. I’m taking baby steps when it comes to culinary cuisine. Today I’m excited to share the recipe for this quintessential summer side dish – a light and easy pasta salad. Originally, I found the recipe on Pinterest, but I doctored it up a bit for personal preference, while still keeping it basic and delicious. And, did I mention it only takes 15 minutes to prepare and serves 10!
Serves 10
Ingredients:
16 ounce Box of Pasta (I like Farfalle pasta)
3 Lemons, Juiced
¼ cup Olive Oil
2 tablespoons Whole Grain Mustard
1 tablespoon Minced Garlic
5 ounces Feta Cheese, Crumbled
1 Pint Cherry Tomatoes, Halved
1 ½ tablespoons, Dried Basil
Salt & Pepper, To Taste
Directions:
1. Cook pasta according to box directions.
2. Juice three lemons and chop cherry tomatoes in halves.
3. Whisk lemon juice, olive oil, whole grain mustard, and minced garlic together in a bowl.
4. Once pasta is cooked, drain water, and transfer pasta to a large mixing bowl.
5. Add dressing mixture, feta cheese, cherry tomato halves, a dried basil.
6. Salt and Pepper to taste.
