This past weekend, I made brunch for my mom and grandmother for Mother’s Day. I always love an excuse to celebrate my mom and grandma; after all, it is because of them that I am here. Now brunch and Mother’s Day go hand-in-hand; and rather than make reservations for an over-priced brunch at a restaurant, I asked if I could try my hand at the culinary arts and make my mom’s favorite breakfast food, Belgian waffles. I went to Pinterest for inspiration and discovered several wonderful recipes, but the one that stood out the most was for a Belgian waffle cake with maple buttercream frosting, which I put my own creative spin on. The best part about this recipe is that you can make a layered Belgian waffle cake or serve it as individual waffles with whipped butter.
Serves 4
Ingredients:
- Waffle Mix (I used this brand of pancake mix)
- 1 Stick (8 Tablespoons) Unsalted Butter, Room Temperature
- 3 Tablespoons Pure Maple Syrup
- 1½ Cups Powdered Sugar
- 1 Tablespoon Whole Milk
- 1-2 Drops Maple Extract
- Berries (Raspberries, Blackberries, Strawberries)
Directions:
- Make waffle mix according to packaging directions. Be sure to make enough batter for seven Belgian waffles if you are making a waffle cake.
- While waffles are cooking in the waffle maker, begin making buttercream frosting. (You can keep the waffles warm in a 200-degree oven.)
- In an electric mixer, whip the room temperature butter on medium speed until smooth and creamy, about 6 to 8 minutes. Be sure to scrape down the side of the bowl so butter is evenly whipped. Butter will become very pale in color.
- Add in maple syrup, powdered sugar, whole milk, and maple extract.
- Whip frosting on medium speed for an additional 5 minutes until frosting mixture is light and fluffy.
- Once the buttercream frosting is finished, assemble the cake; layering waffles on a cake plate, spreading buttercream frosting between each layer.
- Top waffle cake with a dollop of buttercream frosting and berries.
- Serve waffle cake with maple syrup and powdered sugar.
