SPRINKLE COOKIES

One of my favorite things to do over the 4th of July holiday is bake.  I know that may seem a little silly, after all, who wants to bake in the middle of summer.  But, I find it so relaxing, and I love sharing my tasty creations at our evening BBQ’s with my family and friends.  For this past Independence Day, I made Sprinkle Cookies made from a mixture of cake batter and sprinkles.  Everyone said they were a delicious cross between wedding cake and sugar cookies.  Yum!


Makes 20-25 cookies

Ingredients:
1 box French Vanilla cake mix, (Any 15.25 to 18.25 ounces box mix will work)
1 teaspoon baking powder
2 eggs
1/2 cup vegetable oil
1/1 teaspoon vanilla extract
3/4 cup sprinkles (feel free to mix up colors for the holidays)

Directions:
1. Preheat oven to 350 degrees.
2. In a large bowl, mix together french vanilla cake mix, baking powder, eggs, oil, vanilla, and sprinkles.  Stir till mixture forms dough.


3. Drop dough mixture by spoonfuls onto a cookie sheet leaving room between each drop of cookie batter.


4. Bake for 10 minutes.  Allow cookies to cool for 5 minutes on cookie sheet before transferring them to a plate or cooling rack.  The cookies will be very soft and chewy.
